Due to Schmoozer's GI issues and Bert's AI aspect, we are looking into going Gluten Free. Seems overwhelming right now. Not sure even where to begin. I'm not wasteful, so it would kill me to just throw out all of my gluten-y food.
Big sigh.
An amazingly atypical family bares it's soul

Just don't do it for the whole family. Gluten free isn't healthy unless you have gluten issues.
Many families dealing with Autism Spectrum Disorders, like mine, go entirely gluten/casein free, and for many reasons. One, it's often easier with cooking. Second, it streamlines the food budget. And third, you tend to learn bad things about the foods we eat -- like wheat products and dairy, etc. If you haven't already, you might consider checking out the TACA page on the diet -- here -- or buying the Autism Journey Guide, or reading some of the "Getting started" info on my blog here.

Good luck with this new lifestyle. It can be rough at first, but once you get the hang of it I've heard that it gets lots easier.
If you need any help, just holler - been there, done that :P
I have a blogroll of my favorite gluten-free sites over at my place that have some consistently good recipies and I've been adding some to my blog as well. It is a bit overwhelming at first, but it gets easier.
Thanks for visiting my place!
"Feast Without Yeast" and "Extraordinary Cooking for the Ordinary Kitchen" (I think that's what it's called) are chock full of recipes for gluten-free diets, as well as other food allergies!
